Plenty of Chau Doc Cakes (An Giang province) now appear more on the streets of Saigon. In many large intersections or corner of markets, glass stalls, various cakes are sold with full of color  that always attract Saigon residents.

Mr Thuan, a Chau Doc native, who earn his living by making his special hometown dish in Saigon share: “ Chau Doc area near Cambodia so the cross-cultural from Khmer created plenty of special dishes here. First we have to mention Palmyra trees that migrated from Cambodia and grown popularly in Chau Doc. Jaggery (unrefined brown sugar made from palm sap) has  natural sweetness that  made cakes ​​especially delicious taste and beautiful yellow. ”

The most well-known dish of Chau Doc is Steamed Palmyra sponge cakes. According to Mr. Thuan, ths kind of cake is totally influenced by Khmer people, however; other cakes such as: banana cake, banh khoai mi (cake made from grated cassava, sugar, coconut milk, and a small amount of salt), banh da lon (literally “pig skin cake”),etc. have long been Vietnamese cakes.

The most important thing makes steamed Palmyra sponge cakes unique is the stage of ferment yeast. Ingredients include Palmyra fruit, jaggery, rice flour, tapioca starch, etc. and the most delicious rice flour comes from Nang Nhen, Chau Doc to make dough have moderate brittleness.

The cake is delicious or not depends on the stage of fermented yeast. Use cooled cooked rice, Palmyra sugar, yeast Ragi powder, water. Mix everything together, cover and let it ferment for 3-4 days before using.

For bamboo root shaped cakes, other ferment way has to be applied. Therefore, with the same ingredients, and the little different in proportion, the time of ferment, we will have different kinds of steamed Palmyra sponge cakes which only skillful cake markers can do.
